Not Your Fancy Chicken Salad


Sometimes recipes do not have to be 
FANCY
nor
COMPLICATED
to be delicious!
This one is neither.
The photo is pretty uneventful as well.
Such is life!
So here ya go.
Grill, fry, bake or buy some boneless, skinless chicken breasts.
In a small bowl throw a DOLLOP of mayo in.
I like that word, dollop!
Maybe DOLLOP 2 big old tablespoons of your 
favorite mayo from your frig.
Then you add a SPLASH of your favorite Italian Salad Dressing.
I had some Olive Garden Dressing 
in my frig so I grabbed it right away.
Mix it up and then SPILL it over the chicken in a pretty bowl.
I added about 1 tablespoon of diced celery to give 
it a little crunch.
You may also add onions and or nuts for a little crunch 
if you so need too.
STIR
then 
SERVE it up!
There ya go!
So easy yet so yummy!

Winner Winner Chicken Dinner

Triple C Rolls
Chicken, Cheese and Cilantro 


This is so very yummy!
It is such an easy recipe to pull
put of your mama recipe box when 
you have some chicken left over!
I had made some extra chicken breasts
and came up with this quick recipe.
I had all of the ingredients already
so this was a 
Winner
Winner
Chicken Dinner
I'm thinking this would be a great appetizer
as well. I was also thinking if you wanted to make it really fattening you could dump some yummy queso 
on top of each individual serving!
It does have a yummy tex mex feel to it!
I want to serve it with some fresh pico 
and a guacamole salad


Triple C Rolls
1  pound of cooked/grilled chicken breasts (chopped)
3/4 block of cream cheese (room temperature)
2 Tbs of finely chopped white onion
1/3 cup of chopped cilantro
3/4 cup of Monterey Jack Cheese
1 refrigerated pie crust 
1 small chopped jalapeno (OPTIONAL)
Salt and Pepper to taste

Preheat oven to 375.
Combine all ingredients in a bowl.
Spread out one pie crust on kitchen counter.
Spread the chicken mixture on pie crust and roll up until it is one
long roll. Place the roll on a well greased pan and bake for 25-30 minutes or until crust becomes slightly browned. Slice into bars
and serve alone as an appetizer or with a salad for dinner.
I dumped some pico on mine and sliced up some avocado.
It was yummy, yummy yummy!
I doubled the recipe when I served them as appetizers.

Potato Chip Chicken Tenders

Let's talk chicken shall we?
Most kids like fried chicken tenders correct?
Mama's know fried food is not the best thing for our kids correct?
Well here is my version of fried chicken tenders that might be a tad bit healthier.      
I did say a tad!

Mama Holli's Chicken Tenders
1 package of skinless chicken strips
1 cup of Ranch Salad Dressing
2 cups of crushed potato chips (crush more if needed)
Place the dressing and crushed chips in separate bowls.
Dip one tender at a time in the dressing first and then roll in the chips to coat.  Place coated tenders on an ungreased baking sheet.
Bake at 350 for about 25 minutes or until crispy and done.
Serve them up hot and crispy with veggies and a salad!
These are baked not fried but the chips probably counteract that a bit!  :)  Regardless my kids love these!
