Mama Holli's Southern Pimento Cheese


In Texas we can get fancy and serve this up on special crackers at 
Baby and Wedding Showers,  or we just slap it on some bread while we
sit in the shade watching our kids yell "Mama, look at me!" for the 100th time
in the swimming pool, all while pretending that it really isn't
Hotter than H-E double hockey sticks!
Wherever you are when you consume this southern staple
you will be sure to enjoy it and your hot summer days will just melt away!
Also throwing a cold long neck in the picnic basket will help!


Pimento Cheese

4 ounces of cream cheese softened
1- 8oz bag of shredded Sharp Cheddar Cheese
1- 8oz bag of shredded Monterrey Jack Cheese
1- 4oz jar of pimentos drained and chopped
1 jalapeno finely chopped
1/4 Cup of Mayo
Black Pepper to taste
1/4 Cup of Pecan Pieces (optional)
1/4 Cup of chopped Cilantro (optional)

In a medium size bowl mix together cream cheese and mayo.
Add cheese, pimento and jalapeño and mix together until combined.
At this point you may add pecans and or cilantro if you wish.
Sprinkle with black pepper and give it a final toss around the bowl. 
Refrigerate covered for at least an hour before serving.
Serve it up on some yummy bread as a sandwich or as a dip with crackers or FRITOS!
Yes I said Fritos! 😆

Mama is FRESH! Fresh Salsa in The House!


Nana Nucci would call you
FRESH
if you sassed back,
told a joke,
flirted with a boy,
teased her,
pranced around in a new outfit 
or 
if you
did just about anything
other than be a bore!
"Are you getting FRESH with me?",
she would say and then gently cover her mouth and start
laughing out loud!
Mama Holli whips up some 
FRESH Salsa
about once a week for her familia.
It is very similar to the
recipe but slightly different in taste and preparation.
Pull out the trusty food processor or a blender.
I like to use the FP for this recipe as it works best 
with fresh toms. Over blending the tomatoes can make 
your salsa foamy, which you don't want!
Mama Holli's FRESH Salsa
4 vine ripe tomatoes ( quartered)
1 to 2 serrano peppers
1/3 cup purple onion
1 garlic clove
1 cup or more of cilantro
1/2 tsp of sea salt
1 tsp of red wine vinegar

Blend pepper, garlic, onion and cilantro first until finely chopped.
Add tomatoes one at a time, pulsing a few times in between each one. Add the salt and vinegar. This part is up to you....you can pulse/blend it a little more to make it less chunky or leave it as it is. This Mama does NOT like chunky salsa so I blend pulse it a few more seconds. Not too long though or you will loose the fresh taste of the toms. 
FYI.......
This batch I photographed has extra cilantro. I was craving it that day! The fresh toms will blend more pink than red unlike canned toms, hence the greenish color of this batch.
Serve it up with some chips and you are good to go!

Mama Is A Dipper!

 I love a good dip!  I will gladly pass on any dessert to be a participant in a good
dip and chip session!
So I am the queen mama of dips!
Here is one of my favorite and easy dips!
Great for pre Turkey Day festivities!
Baked Potato Dip
1 16oz sour cream
1 cup shredded cheddar cheese
6 slices of bacon cooked and crumbled
3 green chives diced
sea salt and crushed black pepper to taste

Mix all ingredients and chill before serving!
Remember the key to serving holiday dips is to have an adult dip and a kid dip!  The kids are still in training on the proper way to dip!  Hopefully most of the adults know not to "double dip"!
I hate double dippers!  It just ruins the whole dipping experience!
And "triple dippers" are just gross!
Get a plate already!
