Popeye's Stew




My grandfather, Popeye, named by me, a couple of times a year 
in the winter months would set up in his workshop a cooking station.
He would bring in a big cast iron pit where he would build a fire
and hang his huge black pot over it in which he would cook stew.
He would let this stew simmer all morning while he and his
invited crew of menfolk would sit in the garage and play 
dominoes and drink Shiner beer just long enough
for the stew meat to be tender enough to melt in your mouth.
As young children we would bop into the garage to snuggle up 
next to Popeye and or my Dad to watch the game and then scurry
off back into Granny's house to run in the kitchen so we would not miss
what was happening in there either. It was a constant back and forth.
Inside the "women", done with aprons, cooked potatoes, maybe some green beans, 
some sort of salad, homemade pickles, white bread and possibly some 
cornbread but not always. Of course there were way too many 
desserts to count. Each dessert brought in proudly by the owner 
already sliced for sharing and covered with Saran Wrap so no one 
would steal a pinch before after supper. It was truly delightful and 
some of my fondest memories of my childhood. 
Here is my version of Popeye's Stew. It is not exact as he never wrote it down
but we think we have duplicated it pretty close to perfection.
I make mine in a big pot on the stove, in MY KITCHEN!

Popeye's Stew
5 pounds of Stew Meat
2 Tablespoons of Chili Powder (Less if you prefer it milder, more if you like it HOT)
1 large yellow onion chopped
2 Tablespoons of minced fresh garlic
1 Bay Leaf
1 Tablespoon of Bacon Drippings or Lard (Yikes!)
Salt and Pepper to taste
Water - enough to nicely cover meat and add when it evaporates

Cook meat and 1/2 onions in Bacon Drippings over medium heat until half done and still pink inside. Add remaining ingredients and bring to a low simmer. Cover, venting slightly, and simmer on low for 3-4 hours. Stir every 30 minutes and check liquid level. You don't want liquid to evaporate and burn the stew. The liquid level is important as you always want to have enough covering the meat. Once you have reached your desired tenderness serve it up with your favorite bread and enjoy!

Mama's Guacamole






This Texas Mama loves her some good tortilla chips.
What she loves more is a good batch of fresh 
guacamole!
guac!
avocado mash!
avocado mush!
YUM!
However you mash this combo up it will 
always come up tasting delicious!
This is an easy, fresh and delicious recipe.

2 avocados
juice of 1 lime
sea salt to taste
2 Tbls finely chopped onion
1/2 Cup chopped cilantro

In your favorite bowl, mash up 2 ripe avocados.
Mix in all the other ingredients.
Add one avocado pit to the dip, cover and chill 
for about 30 minutes before serving.

I love my Guac all by itself or with some 
really good tortilla chips.
Serve it up with your tacos, fajitas, sandwich, burrito,
salad, and or grilled protein. You can not go wrong
serving it up with any of the above.

Mama's Chicken Salad







I am a freak when it comes to 
chicken salad!
I am very picky and I know what I like
and I definitely know what I don't like.
I prefer to make my own and I have quite a few
versions depending on my mood.


Today I was thinking I could be a little healthy
and I added some perky cranberries and some nuts.

I surprisingly traded a second slice of bread for some 
yummy smushed avocado! 
I have to admit it was pretty clever of me!
The avocado really kicked it up a notch!
Oh Yeah!

Mama's Healthy Chicken Salad

4 boneless & skinless organic chicken breast
2 stalks of celery chopped
1/2 cup of dried cranberries 
1/4 cup of chopped pecans
2 Tbls of finely diced white onion
2-3 Tbls of Mayo
1/2 tsp of balsamic vinegar
Sea salt and fresh cracked pepper to taste

I like to cook my chicken in my cast iron skillet 
with a little olive oil.
I season my chicken with salt and pepper.
I do like it just a tad crispy around the edges so halfway 
thru the cooking, I will cut up the pieces
so it has a chance to crisp up a little. 

Mama has been known to add some of the yummy drippings
left in the pan to the mayo mixture 
before adding the chicken to it.
(Don't tell anyone!)
YUM!
Let the chicken cool and then dice it up and set aside.
In a small bowl add the mayo, vinegar and 
drippings if you dare!
In a big bowl mix the chicken, celery, onions, 
pecans and cranberries.
Mix in the mayo mixture and salt and pepper.
Toss it all around and 
get it into the frig so it is nice and cold.

Scoop it on top of a nice salad, 
load it up in a wrap 
or slap it on some yummy bread!
There ya go!

"Summer Lovin" Part 1



Summer for this Colorado family means a pilgrimage

then you are surely missing out.

I have tried to reproduce the WHATABURGER
without success but I do have some Texas recipes that I have perfected
that hold me over until I can get me some Whataburger!

Mama's Easy Crockpot Breakfast Casserole



Not the prettiest of photos but it taste so good!

Mama's Texas cousins came in town to see snow!
They drove all day and most of the night to get here.
I wanted to have a nice warm breakfast
to fill up them up before they headed
to the mountains to play.
I decided to try my usual breakfast casserole
BUT
in the crockpot instead of the oven.
Mama
was
nervous
But guess what? 
It worked like magic!
I fooled my cousins to thinking I was
up all morning cooking up a storm.
They awoke to the smell
of eggs and sausage.
The crockpot did all the work!
Mama
slept
in
So needless to say it was a big hit and I will
most definitely be making it again!

Crockpot Breakfast Casserole with an Italian Twist
8 -10 beaten eggs
10-12 slices of bread (cubed) any kind of bread may be used. (I like to use french bread)
3 Cups of whole milk
2 1/2 C mozzarella cheese (really any kind of cheese is fine)
1 lb. Italian sausage crumbled, cooked and drained
½ tsp. salt
1 tsp. pepper (more or less to taste)
fresh spinach and or sliced mushrooms can be added if desired. (no more than 1/2 C each)


Optional add-ins 
1/2 Cup Chopped onions
1/4 Cup Jalapeños
1/2 Cup Bacon
1/2 Cup Chopped Cilantro

Directions
Grease the sides of the crock with butter. Make layers in the crockpot of bread, followed by sausage, followed by cheese, ending with a cheese layer. Beat eggs, milk, salt and pepper together. Pour over crockpot mixture, cover and turn on low. Cook for 8-12 hours. Put it on before you go to bed and wake up to the smell of an amazing breakfast. Serve with fresh fruit and you are done!

This Little Piggy Went To Market!

I have to confess
 I LOVE BACON
Pretty Much
ANYTHING
with
BACON!
OINK OINK!
The Big Bad Wolf 
Likes Bacon Too!

So This Recipe Is For 
All The Bacon Lovers
Out There!

Little Piggy Appetizer 
3/4 cup grated Romano or Parmesan Cheese
One Sleeve of Rectangular Club Crackers (Waverly Wafers is what I use)
1 pound sliced bacon (cut in half)

Preheat oven to 250 degrees.
Place about 1 teaspoon of the cheese on each cracker and wrap the bacon around it.  Stack a broiler rack on top of a cookie sheet to catch juices from bacon.  Place the wrapped cracker on the broiler rack seam down.  Bake for 2 hours.  No need to flip crackers.  Serve hot or at room temperature.

I know what you are thinking!  No they are not soggy!  They actually crisp up really nice! These are such a hit with the menfolk!
I made a batch of these and they were gone in 5 minutes flat!

HOLLI HOT SAUCE

In Texas we call the yummy dip
served with tortilla chips in all
Mexican restaurants
HOT SAUCE!
In Colorado it is called
SALSA!
This Mama LOVES
HOT SAUCE!
Usually I make my own as I
am pretty picky about my
HOT SAUCE!
Starting at a very young age,
5 years old to be exact,
my mom would pack
HOT SAUCE
in my metal
Scooby Doo
 lunchbox!
I remember very vividly
sitting at the cafeteria table
dipping my Fritos into my
HOT SAUCE!
  Of course every single child at my
table wanted a taste!
One can only imagine the
GERMS
we
shared!
YUM!
News spread fast!
I became very popular!
I'm sure I felt pretty good about
my new fame and notoriety
as I marched through
the halls of
Hobby Elementary
with my crooked bangs
and
knobby knees!
I can just hear the chatter in the hall!
"Hey Holli! Did you bring your
hot sauce today?"
"You betcha!" was Holli's perky reply.
Then a loud cheer and a sudden
commotion as children argue
about who gets to sit at
"Holli Hot Sauce's" table today!
WOW!
I owe it all to
HOT SAUCE!

So I am going to bestow upon
you all a very easy
HOT SAUCE
recipe!
I have many
HOT SAUCE
recipes but here is the easiest
one from my recipe box.
Once again you will need this

This is a "cheater" recipe!
So let's name it......
Cheater HOT SAUCE

In a blender put 2 cloves of garlic
1 cup of cilantro and
the juice from 1 can of Rotel.
Blend on high about 20 seconds.
Add the remaining can of Rotel
to the blender and blend another
20 seconds.  Do not blend too long
or it will become foamy!
There you go!
Easy Peasy 
40 Second 
Cheater
Hot Sauce!
This is great on eggs, tacos,
quesadillas, you name it!
Store in the refrigerator for
up to 5 days.

I double dare you 
to put it in
your child's lunchbox!
