Wedding Season Brings Blessings Abound


 



We are coming up on a year since my son married his best friend, Micah Elaine!
She is the woman who will be by his side for eternity. 
She is amazing and is now my daughter.
Steve and I know how blessed we are and are constantly pinching ourselves praying it is not just a dream that all of our children find they soulmates. Truly we do not take this for granted at all. It is a privilege and honor to witness this journey. For our children are ours to hold for just a small window of time and then we must let go and watch them take flight in this crazy, sometimes cruel yet beautiful world. It is hard work raising babies. I mean really hard but oh my goodness it was and continues to be our greatest joy, honor and gift from God. A gift so extraordinary we could never be worthy of and yet we continuously attempt to reach worthiness. Fortunately, God does not expect perfection from us but only that we long to be more like Him and be with Him. Our growth as a family unit is monumental and all of our triumphs and hardships just keep inching us closer and closer to our eternal life together in heaven. In heaven we will be united with all of those who have gone before us and will come after our arrival. We join those before us who have helped to shape us to be who we are. We are all connected and intertwined. We lost my Dad, our Paw Paw during the pandemic. It has been difficult and he is missed so terribly yet our faith promises us that we will see him again. It is that promise that carries us through those painful seasons and we discover that even in great sadness we can celebrate and experience tremendous joy. 
My son had planned his proposal in advance and then the lockdowns came and so we encouraged him to proceed with his plan even when his plan had to be altered not allowing family to be present. All was in place and on Easter Sunday he proposed on one knee to his Micah. My Dad went to heaven hours before Jake proposed. In my mind, this allowed his Paw Paw to be present and witness the proposal even while other family members could not be present. Finding beauty and joy in one of our most painful days and knowing that we will be together again was a blessing and a testimony to our love for my Dad and most importantly God, our Father. As we come to a close on the first year of celebrating the newlyweds and our family growing, we find ourselves privileged to begin preparations to add another family member to our clan and witness our daughter marrying her best friend, Drew. Again we remain humbled and in awe of our abundance of blessings. I pray that we never forget to offer prayers of gratitude. That we always remember our perpetual blessings in this life and pray for those who sufferings and sacrifices are larger and more painful than ours at this present time. May we keep those less fortunate in our daily prayers in hopes to mitigate their suffering.

Wedding Bliss and Blessings Beyond

 










With a big, mama, grateful heart I want to welcome
Micah, my newest daughter, to the Nucci Family!
As a mama I prayed for Jake since childhood for
God to show him the woman He chose for him
to become one and navigate this crazy and often 
very confusing and challenging life together.
Jake kept his eyes wide open and waited sometimes
impatiently for that woman to step into his world.
When Jake moved to Dallas almost 3 years ago, I followed
him behind the UHaul and moved him into an apartment 
in just 2 short days. I remember giving him a big and long hug,
slipping some cash in his pocket for supper and telling him
that he would be a hot ticket in the Dallas dating market so
he would need to take time to review his many options and not
fall in love with the very first girl who caught his eye.
Well he waited an entire 24 hours to ask Micah to dinner
and the rest is history! Our entire family welcomes Micah with
our arms wide open! We love her for the amazIng Godly
woman who loves our Jake. Boy oh boy are we BLESSED!


Thank you God for bringing them together from miles apart.
Thank you Micah for loving Jake so completely.
Thank you Jake for patiently waiting for God's will to unfold.
We love you both a whole LOT
and we can't wait to watch your journey unfold.

a man and woman together through the 
Sacrament of Holy Matrimony, they become ONE body.
One to conquer this life together.
One to worship and glorify God.
One to accept the gift of children.
One, never to be alone.
ONE!
How amazing is that!











God created man and woman out of love and commanded them to imitate 

His love in their relations with each other. Man and woman were created for each other: 

“It is not good for the man to be alone. I will make a suitable partner for him. … 

The two of them become one body.” (Genesis 2:18, 24)

Wedding Cake




Cherry Cake or Almond Wedding Cake

1 cup sifted flour
1 cup sugar
1/2 tsp sea salt
1 1/3 cups of tap water
1 cup sour cream (whole milk)
2 Tablespoons Canola Oil
1 1/4 tsp Almond extract (organic)
1 1/4 tsp Vanilla extract (organic)
4 medium egg whites
Dash of Cinnamon
1 box of white cake mix (I use Duncan Hines)
(1 cup of fresh cherries, pitted and cut in quarters - for Cherry Cake)
No cherries for Almond Wedding Cake
If making a larger cake with multiple layers I double or triple recipe.

Directions
Grease and flour pans to be used.
Preheat oven to 325.
Gently stir the cake mix, flour, salt and sugar in a medium size bowl.
Add to the bowl water, oil, sour cream, extracts, cinnamon, cherries and egg whites. Beat on low for about 3 minutes.
Pour into greased pans and bake until tops are brown about 25 minutes.
Test with a toothpick to see if it is done before bringing out of the oven.
Cool on wire racks.
Ice with your favorite icing recipe and decorate as you wish!
My daughter loves to make a simple butter cream frosting and really loads it up. This is amazing and we love to store it in the refrigerator and bring out about 15 minutes before serving! 

Icing
Pure unsalted butter softened/ room temp  2 sticks
4 Cups of confectioners sugar
1 Tablespoon of half and half
1/2 tsp almond extract

Combine sugar, butter and extract in a bowl and mix using a paddle attachment on low speed to combine ingredients. Bring to High and beat about 2 minutes until it is fluffy. Add the half and half if needed. 
Store this in the refrigerator until ready to use and then bring back to room temp to frost cooled cake or piping for making flowers. 
Double if needed!

Baby Cakes


Baby Girl #2 Can BAKE A cake!
I mean REALLY BAKE a cake!
She made her very first wedding cake!
It turned out beautiful, tasty and so very moist.
It was all from scratch.
She tried out three recipes and had a taste test.
I was so proud of her! She baked it the day before 
and decorated it the morning of the wedding so it
would be fresh and perfect!
It was a LONG drive to the venue
but the cake made it safe and sound!
