Cinco De Mayo

We celebrate Cinco De Mayo
about every week
at Mama Holli's house!
Mexican Food!
We always have fresh
and tortillas are a staple in
our pantry!
is a quick and easy meal
we make quite often.
Sometimes it is breakfast.
Sometimes it is lunch.
Sometimes it is a snack.
It may be filled with chicken, steak, beans, cheese,
mushrooms, pork or just about anything within reach!
Easy and quick to make.
Just stuff what you like in between two tortillas.
Make sure you stuff some cheese in to bind the ingredients.
Heat it up in a well oiled skillet.
Flip it over to hit the other side.
Cut it up like a pie and serve it up
with your favorite toppings!
Sour cream, salsa, guacamole, pico, queso .....
you get the picture!

Sounds like our house, Holli! Never a week goes by without at LEAST one Mexican-food meal...we joke that we have salsa flowing through our veins!

You won't bilieve this, but after just seeing the picture at the head of your post I got so nostalgic..
I make Mexican food quite often at home, but then, I live in Canada, so I have to..
But I grew up in Southern California, and I miss the colour and music of those fiestas..I even went looking for Olvera Street pictures, the oldest street in Los Angeles, where they sell evey little thing Mexican you can imagine, and have wonderful outdoor restaurants...see what a li'l ol' picture can do?

We live on tortillas too. It is just the go-to food around here. When in doubt, put something on a tortilla. We have gotten pretty creative around here!

And I thought we were the only family that wanted mexican food every week. looks like we are in good company. we love it at home and eating out. my son is hooked on queso. love your site.
