Winner Winner Chicken Dinner

Triple C Rolls
Chicken, Cheese and Cilantro

This is so very yummy!
It is such an easy recipe to pull
put of your mama recipe box when
you have some chicken left over!
I had made some extra chicken breasts
and came up with this quick recipe.
I had all of the ingredients already
so this was a
Winner
Winner
Chicken Dinner
I'm thinking this would be a great appetizer
as well. I was also thinking if you wanted to make it really fattening you could dump some yummy queso
on top of each individual serving!
It does have a yummy tex mex feel to it!
I want to serve it with some fresh pico
and a guacamole salad

Triple C Rolls
1  pound of cooked/grilled chicken breasts (chopped)
3/4 block of cream cheese (room temperature)
2 Tbs of finely chopped white onion
1/3 cup of chopped cilantro
3/4 cup of Monterey Jack Cheese
1 refrigerated pie crust
1 small chopped jalapeno (OPTIONAL)
Salt and Pepper to taste

Preheat oven to 375.
Combine all ingredients in a bowl.
Spread out one pie crust on kitchen counter.
Spread the chicken mixture on pie crust and roll up until it is one
long roll. Place the roll on a well greased pan and bake for 25-30 minutes or until crust becomes slightly browned. Slice into bars
and serve alone as an appetizer or with a salad for dinner.
I dumped some pico on mine and sliced up some avocado.
It was yummy, yummy yummy!
I doubled the recipe when I served them as appetizers.

Texas King Ranch Chicken Casserole!

(These photos do not do it justice
but it will have to do for now!)

If you are from Texas you have had
this dish for sure!
It is so warm and filling!
Great for a cold winter day
like it is here today in Colorado!
There are many variations to this
dish but all involve chicken,
cheese and tortillas!
How can you go wrong with that combo!
So Mamas just go to the kitchen and
whip this puppy up for supper!
The kids won't fight all evening cuz their
bellies will be so full they will
pass out on the couch!

Ingredients
1 whole chicken cooked, deboned and cut into medium pieces
12 corn tortillas (cut into quarters)
1 can of Rotel Tomatoes
2 cans of cream of chicken soup
1 cup of sour cream
1 can of chicken broth
1/2 cup of chopped fresh cilantro
2 1/2 cups of shredded cheddar cheese

Directions
In a bowl add Rotel, soups, sour cream, cilantro, and 1 cup of cheese.  Mix well.  Slowly add in 1/2 can of the broth. Check consistency.  It needs to be a thicker than a pancake batter but not too thick.  Add more broth if it seems to thick. I usually end up using the majority of the can. I can always add more cheese if I get it to thin.  In a 12 x 10 or so casserole dish ladle about 1/2 cup of the sauce into the dish and spread it around. Put one layer of tortillas on top of the sauce. Next place cut up chicken on top of the tortillas.  Don't use all of the chicken as we will repeat this layer again. Ladle some of the sauce on top of the chicken.  Continue with this layering; tortillas, chicken, and sauce until all ingredients are used up.  So you have ended with sauce on top.  Take the remainder of the cheese and dump on top of the casserole!
Bake uncovered at 350 degrees for about 45 minutes or until it browns and bubbles.  Make sure the middle is hot too!  I serve this with a green salad, chips and salsa! Guacamole and pico are excellent with this as well!  This serves 6-10 depending on the serving size. We are a family of 5 and we always have plenty left for breakfast! Yes I said breakfast! YUM! If you would prefer turkey instead of chicken that can be easily substituted with the same great taste. And for a speedy version you can pick up a rotisserie chicken and go to town or just throw about 4 medium chicken breasts on the grill instead of boiling a whole chicken. Any of these versions will be delicious!

Mama's Sick Chicken Recipe!

Okay....So here is the story behind the
"Sick Chicken" recipe!
This easy and yummy casserole became popular in our family
because my mom would deliver this to our house if we were
sick or had just had a baby or just sick and tired of cooking!
So my nephew named the dish
"Sick Chicken"
So in his mind, when one was
sick this chicken dish
would arrive at your house.
This name was given before
"Sick" meant GOOD or COOL!
We all love  Sick Chicken!
It is not SICK! (Bad) It is SICK! (Good)
It taste delicious!
So today I will share with you the recipe for this SICK dish!~

Simple ingredients.....
1 can of broth
1 can of cream of celery soup
Cooked and diced chicken ( about 4-5 breasts)
1 box of stuffing
Put chicken in the bottom of a
casserole dish.
In a small bowl, dilute the cream of celery soup
with 1 cup of chicken broth.
Spread the evenly over chicken.

Cook the stuffing according to the instructions on the box.
Spread stuffing on top of soup.
Bake at 350 degrees for about 30 minutes or
until it is good and bubbly!
This is such an easy and delicious meal!
I always serve with
coleslaw, green beans and cranberries!
It is like Turkey Day all over again,
only much easier!
So there you go!
"Sick Chicken" ROCKS!

Cheater Tip! If you are in a hurry just pick up a rotisserie
chicken from the grocery store, debone and cut it up
instead of cooking chicken breasts!
